Biscoff Cheesecake Recipe

If you haven’t heard of Biscoff, have you been living under a rock? Biscoff has been the trend, going viral for the many recipes that the internet produces. Biscoff cookies, biscoff cinnamon rolls, and even biscoff cheesecake.

There are many different recipes from this craze, but here is our take on the No Bake Biscoff Cheesecake Bars. 

Ingredients: 

Crust:

3 cups of ground up Biscoff Cookies

½ cup melted butter

Cheesecake:

2 packages of cream cheese

1 jar Biscoff Spread

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

Topping: 

¾ – 1 cup smooth Biscoff Spread

Extra Biscoff Cookies

Instructions: 

  1. Ground up biscoff cookies and mix with melted butter (microwave for 20-30 seconds) for the crust layer.
  2. Pat it down at the bottom of the pan using the back of a spoon or a flat object to press the crust down evenly. Place it in the freezer while you prepare the cheesecake filling. 
  3. In a bowl, mix the room temperature cream cheese and Biscoff spread with a whisk or any utensil until smooth. (You can also use a stand mixer if you have one.)
  4. Then add the cream, powdered sugar, and vanilla and mix until the mixture is smooth and thick. 
  5. Evenly spread the filling over the Biscoff crust and freeze bars for 30 to 40 minutes. 
  6. Warm up Biscoff spread in the microwave until smooth and pourable. (Shouldn’t take too long. Around 20-25 seconds)
  7. Pour the spread over the cheesecake layer and spread evenly. Then sprinkle over cookie crumbs and whole cookies. 
  8. Chill the bars in the freezer  if you would like them to be firmer. If not, you can cut the cheesecake into your desired size.
  9. Plate and serve!
